This summer got back to my childhood roots with an amazing camping trip, which of course necessitated some homemade s'mores, which of course necessitated some creative maneuvering re: homemade paleo grahams. Full s'more post to follow, but these are a fun snack and easy to whip up (been eating them with tahini and dried raspberries/strawberries as a kind of snack-y pb&j alternative) in the meantime!
  1. Preheat oven to 350 degrees Fahrenheit.
  2. Mix first 9 ingredients together (everything 'cept fat and water).
  3. Cut in lard using a pastry cutter until you have small pea-sized chunks of mixture.
  4. Add water in tablespoons until dough comes together and you can form it into a flat disc. Roll out between two (tapioca/arrowroot) floured pieces of parchment paper to about 1-1.5 mm thickness, then cut out cracker shapes as desired and re-roll as needed until mixture is used up. Use a chopstick and fork ends to make the graham cracker design.
  5. Bake on parchment-lined baking tray for 10-15 minutes, until crackers have hardened (keep a close eye on them - cooking time varies by oven). Let cool and pack for your next cookout/camping trip!
