Apple Pie Gummies (paleo, AIP)

Serves: 9 large or 20 small gummies
Have these on hand for a quick treat/to use up extra apples while getting in some anti-inflammatory and gut-healing ginger and gelatin. Apple pie flavors in a pinch ;)
  1. Bloom gelatin in ¼ c water.
  2. Grate or food process cored apple with ginger and ¼ c water.
  3. Add lime, cinnamon/mace, and coconut oil.
  4. Add to gelatin and heat up gently over stove until mixture is well-incorporated.
  5. Pour into molds and refrigerate until set.
