The people need a good cheese recipe, if you ask me. This cheese slices, grates, melts and tastes closer to real cheese than any I've tried so far (and it's passed multiple non-paleo taste tests*) - thus it pleaseth me greatly. Hopefully it pleaseth you too. ;)

  1. Bloom gelatin in coconut milk (mix together).
  2. Steam cauliflower and garlic until cooked through (or nuke in microwave) and drain any excess water.
  3. Blend with other ingredients (including bloomed gelatin) while cauliflower is still warm, until mixture is as smooth as possible (I used an immersion blender for this.)
  4. You can either pour mixture into container/mold (lined with parchment paper for easier removal) directly, or cook it stove-top over low heat for 5-10 minutes until the starch thickens (mixture will become gooey and congeal a bit), and then pour into mold. The no-cook version yields a slightly lighter cheese, and the cooked version a darker, stretchier cheese (I like both versions).
  5. After you've poured the mixture into the lined container, leave in refrigerator overnight to set.
  6. Then slice, grate, or cut into whatever cheese-like forms your heart desires!
