Korean Kimchi Pancake (kimchijeon) (paleo, AIP, vegan)

Serves: 10 small-medium pancakes
  1. Heat up a skillet or good flat-bottomed nonstick or cast iron pan on medium heat.
  2. Mix pancake ingredients together in order listed.
  3. Place ~1 tb of oil in pan.
  4. Spoon ~2 tb of batter onto hot pan and spread it out evenly. Repeat, leaving enough space in pan to flip pancakes.
  5. Cook for around 5 minutes per side/until brown.
  6. Serve with coconut aminos and chopped scallions
