Sweet Potato Gnocchi (paleo, AIP, vegan)

Great way to use up excess tubers, plus these are fun to play with/throw at people (kidding, save your non-paleo gnocchi for that). This is a single serving for a hungry person so feel free to double/triple. Happy gnocchi-making!
  1. Bring pot of salted water to boil.
  2. Mash sweet potato with a fork until smooth, then add flour, salt, and oil and mix well until workable dough forms.
  3. Tear off small pieces and roll into gnocchi shapes individually (can also roll and cut out and/or indent with fork if desired).
  4. Boil gnocchi in two batches in boiling water. Gnocchi are done when they float to the top, which should take a couple minutes. Drain in collander.
  5. Brown in oil in non-stick sauté pan to desired color (~5-10 minutes).
  6. Plate and finish with olive oil, sea salt, herbs (rosemary), and grated cauliflower cheese.
