Mango Lassi (paleo, AIP, vegan)

I love mango lassis, but haven't been able to find many dairy-free versions - coconut yogurt is a simple fix (you can use store-bought or homemade), and adding extra lemon cuts the sweetness of the mango for a refreshing and healthy afternoon pick me up!
  • 2 ripe mangoes
  • 1 cup coconut yogurt
  • 1 cup coconut milk
  • ⅛ tsp sea salt
  • juice of ½ lemon or 1-2 tb apple cider vinegar (season to taste, mango is too sweet for me so I like a lot of acid)
  • 1 tsp cinnamon (optional)
  • mint & cinnamon sticks for garnish
  1. Peel & cut mangoes.
  2. Blend with other ingredients (I used an immersion blender) and season to taste.
  3. Pour into glasses and garnish with mint & cinnamon.
