Paleo-AIP Carnitas (Mexican-inspired pulled pork)

  • 3 pounds pork shoulder/butt
  • 1 orange, quartered
  • 1 onion
  • 1 cinnamon stick
  • 5 cloves garlic
  • 4 tb coconut oil or lard
  • 3 tsp sea salt
  • 3-4 cups of water or stock
  • Serve with tortillas, radish, cilantro, guacamole, pico, and/or chopped onions
  1. Instant pot method: Place all ingredients (including entire pork shoulder) into instant pot. If pork doesn't fit, cut it into a couple pieces.
  2. Cook on high pressure for 1 hr and 20 minutes, or until meat is falling apart and easily shreddable with a fork.
  3. Stovetop method: Place all ingredients in a large pot. Bring to a boil and reduce heat, cooking for 3-4 hours until meat is falling apart/easily shreddable.
  4. Crisp up meat in a cast iron pan with tablespoon of lard or coconut oil before serving.
